i hate leftovers. the smell coming from the containers once they've been in the refrigerator for multiple hours. its mushy. cheese has lost its gooey strings. meat isn't as tender. ahh, gag.
i will have to say however, i can eat leftover japanese & pizza.
anyways, i started thinking about my mom's mushroom & cheese pizza. it's so good. and as i got out the asparagus & mushroom containers, i thought i would give mom's quickie pizza a twist.
i'll call it "i don't know what do with my leftover asparagus & mushroom pizza." & this is how i did it.
i laid out two mini-pizza pie crust. (one for me, one for mom).
got out the olive oil.
& spread it generously on each crust. (especially the edges).
then i warmed up my leftover veggies.
& cut the asparagus into smaller pieces.
i then evenly laid out the mushrooms & pieces of asparagus on each crust.
coated the top with mozzarella cheese.
then baked it in the oven at 360 degrees until the cheese was starting to brown.
then voila!
who knew leftovers were so good.
deliciousness in 10 minutes.
and they were so good! :) :)
